Tuna Egg Scramble
What you will need:
1 can of low sodium tuna in water
1 large whole egg
5 large egg whites
1 tortilla
Fat-free or low fat cheddar cheese
Green Chile
PAM Spray
Heat stove top to medium heat. It a medium skillet cook coated with PAM, mix all your egg whites and whole egg together scrambling them as they cook. Cook until not watery. Reduce heat to low. Open can of tuna, drain. Add entire can to scrambled eggs. Stir briefly and place on top of tortilla. Add a sprinkle of cheese and about 2 tablespoons of green chili. Enjoy!
** Substitute tortilla for brown rice tortilla to make it gluten free. Use almond/soy cheese.
